Monthly Recipe: Avocado Mango Salsa

Ingredients:
1 Mango-Peeled, Seeded and Cut Cp
1 Red Bell Pepper-Optionally
3/4 Cup Chopped Red Onion  
2 Avocado- Peeled, Seeded and Cut Up
1 Tablespoon White Sugar
1 Table Spoon Canola Oil~ I use the brand Popeian OlivExtra Mediterranean Blend
2 Tablespoon White Wine Vinegar
1 Teaspoon Salt.


Directions:
Took all your ingredients and mix it in a food processor. If you don't own a food processor mix your ingredients with a spoon in a bowl.

Hello Everyone. It a new month. So that mean it time for a new recipe. My husband and me made Avocado Mango Salsa on Saturday for are friends and us to eat. This is on of are go to items to make for when we have company over. This recipe is so easy to make. Normally we add the red bell pepper in to ours but I forget to buy one.  What nice with this recipe is if you forget an ingredient you can still make it.

We have made this a few time with out an onion or red pepper. I think there has only been a few time we had everything we needed to make this salsa. Over all this salsa is super good. This was the first time we didn't make a big batch of it. By the time it was time for my friends to leave. The salsa was all gone.

You can change the recipe up to you liking. Add more mango or avocado if you want. We always change it up for the number of people we are having over.

Monthly Recipe: Tuna Pasta Salad


Ingredients:
1 pound medium shell pasta
1 cup frozen peas
3 cans (small cans) or 1 large can chunk white tuna
1 cup mayonnaise
1 tablespoon Dijon mustard
1/2  red onion, diced
Salt and pepper to taste

Directions:
Cook pasta according about 8 minutes so it’s al dente.
While cooking, mix together tuna with mayonnaise, mustard, frozen peas, onions, and s&p in a very large bowl.
Drain and rinse pasta with cold water.
Add cooled pasta to tuna mixture.
Cover and refrigerate a few hours before serving.

Hello Everyone. No WIWW(What I wore Wednesday) post today. Due to I'm busy trying to get my house back together. Plus I lost my photo taking spot. Do to the junk we pulled out of all the rooms we redid.  I tell you redoing your whole house at once is a lot of work. I don't advised anyone to do it.  So instead of my normal outfit post this Wednesday.

I bring you my monthly recipe. This month it is tuna paste salad. My husband had a work pot luck yesterday. I need some thing quick and easy to make for a good amount of people. So I decide to make tuna pasta. Since it fix what I was looking for. The tuna pasta was a big hit. My husband brought home an empty bowl home. Which I like every much.  With this recipe you can change it up to. If you don't like tuna fish. Then you can use can chicken.

Christmas Baking



Hello Everyone. On Sunday I spent the day making Pretzel Delights for my husband pot luck. I also made goodies to hand out to the neighbors for Christmas gift. I love making homemade bake goods and handing them out. Its one of the many tradition I do during this time of year.


Pretzel Delight are so easy to make. I have the recipe already on my blog but decide to share it again. All you need is some time on your hands and 3 ingredients.  The ingredients you need are the following

~ Rolo's ~ I end up using 8 bags of them
~Pretzels~ Square or small closed circle one
~Pecans


The fun part is defoliating all of the rolo's. This took me a few hours to do.  Once you have the foil off of the rolo's. Start placing the on top of you pretzel.  Once your cookie sheet is filled up with pretzel and rolo's. Place it in the oven at 350 degree for 1 to 3 minute. You just want to lightly melt the chocolate. Then you want to put the pecan on top.

After you put the pecan on top. Let them sit out to harden back up or place them in the freezer.  I let mine sit out for a few hours. Plus I put them in the freezer for a few. These are so easy to make but do take time to make. Plus you will get your hand dirty with chocolate.

I ended up making 4 and half dozen of sugar cookies.  1 Dozen of chocolate chip cookie and tons of pretzel delights.  The bowl up above is what I gave to my neighbors. Along with a Christmas card. They all loved it and were surprised.

Monthly Recipe: Pineapple Chicken


Ingredients:
6 small chicken things about 1.5 – 2 ounces each
1/4 cup reduced-sodium tamari or soy sauce
1 tbsp brown sugar
1 tsp minced ginger
1/2 tsp crushed red pepper flakes
1 8-ounce can pineapple

Directions:
Preheat oven to 400 degrees.
Coat an 8 x 8 baking dish with nonstick cooking spray, I used my awsome stone which means no cooking spray.
Place chicken thighs in a single layer in a baking dish.
Combine tamari or soy sauce with brown sugar, ginger, crushed pepper and pineapple in a small bowl and  pour over chicken.
Bake uncovered for 25 – 40 minutes (depending on the chicken size), basting frequently with juices. Serve and enjoy.

Hello Everyone.  I'm here to share with you all another monthlty recipe with you all again. This time it is pineapple chicken. This is another super easy chicken recipe. If you can't tell by my recipe. My husband and me eat a lot of chicken. Even in Florida my Oma was like I can't eat anymore chicken. When she find out we had chicken for lunch. She was like chicken again. What can I say we are chicken lovers. 

I use soy sauce when I make this recipe. I have yet to try it with other kind of sauce.  I find this recipe on Crazy Girl Eats.  Beside this recipe being easy to make. It weight watcher friendly.

Monthly Recipe: Brown Sugar Spiced Baked Chicken

 Ingredients

2 1/2 tablespoons light brown sugar
1 teaspoon smoked paprika
1/2 teaspoon cumin
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
6 chicken breasts

Directions
1. Pour brown sugar, paprika, oregano, garlic powder, and salt & pepper into a bowl.
2. One by one place the chicken in the bowl and coat it. 
3. Place the chicken in a ziploc bag. Seal the bag.
4. Place the chicken in the fridge for 30 minutes. You can do longer if you want but 30 minutes is all you need.
5. Preheat oven to 425 degree(233 Celsius).
6. Arrange chicken breasts on a lined baking sheet. Bake for 20-23 minutes.

Hello Everyone. I'm back with another recipe to share with you all. The first time I had this chicken was at a friends BBQ over the summer. It is super good chicken. So I ask my friend where she find the recipe at. She told me on Pinterest. On a Sunday afternoon I searched her recipe board and I find the recipe. That night I decide to make the chicken. I didn't have the smoked paprika. So I used regular paprika. Which the chicken turn out okay. It didn't taste the same as we had at the party. I told my friend that I made the chicken and it didn't taste the same. She told me that she used the smoked paprika and dark brown sugar. When I went to the store to buy smoked paprika I couldn't find it. So I said something to my friend about not being able to find the smoked paprika in the store. Then next day my husband showed home with a bottle of smoked paprika that my friend gave her husband to give to mine. So now I have smoked paprika. I re-made the chicken again using the smoked paprika and dark brown sugar and it turn out amazing.

This chicken recipe is used a lot in my house. Since it so easy to do. I will whip this up some night before I go on a run. Then when I get home all I have to do is pop it in the oven. To go with the chicken I just add a side of vegetables with it.

Halloween Recap



Happy Monday Everyone. I hope you all had a great weekend. My weekend was a good one. On Saturday I went to my friend Halloween party. Which this year they had a theme party. The theme was viking. So I went as a viking towns lady. My husband went as a future viking Dr. For a costume this year we made some of it and then brought some things.  The dress I'm wearing is from a Halloween costume store. My husband crocheted my headband. Along with his hat and mustache. We brought some fur and lined them with silk. To wear as are cloaks.

For food we did it pot luck style. I made a peanut butter roll. I got the recipe off of Sunny Days&Starry Nights. I also made my 7-layer Mexican Dip. My husband made 99 jelly shoots for the party. All the food was yummy. I ate and drank way to much.

Over all the party was a great one. I'm so happy how my costume turn out. It took my husband and me a few weeks to get everything just right. The best part about my costume is I can wear it again. If we ever go to a castle fest.

BBCA DAY 9: Monthly Recipe:7-Layer Mexican Dip

 Ingredients
2lbs Ground Beef
4 Avocados, Medium to Large
1/4 Cup Fresh Cilantro
1/2 tsp Garlic Powder
1 Bunch Fresh Green Onions
1/2 Juice of Lime
1 Small Red Onion
4 Vine Ripened Tomatoes
1 (16oz) Can  Refried Beans 
1 (2.25oz) Can Black Olives
2 Packets (1oz each) Taco Seasoning Mix
1/2 tsp Black Pepper, Freshly Ground
1/2 tsp Kosher Salt
2 Cups Cheddar or Mexican Blend Cheese
1 (12oz) Container Sour Cream 
 Directions
  1. In a heavy skillet, combine ground beef with 1 packet of taco seasoning. Stir well and cook on medium until cooked through. Drain. Combine cooked beef with refried beans and set aside.
  2. In a bowl, whisk together the sour cream and 1 packet of taco seasoning mix. Set aside.
  3. In a bowl, place peeled and seeded avocados and mash well. Add lime juice, chopped cilantro, chopped red onion, kosher salt, garlic powder, and fresh black pepper. Set aside
  4. In a 9x13 or similar size serving dish, evenly spread the beef/bean mixture on bottom. Continue layering in the following order: sour cream mixture, guacamole, diced tomatoes, and shredded cheese. Top evenly with a layer of green onions and sliced olives. Wrap tightly, keep chilled, and serve with hearty corn chips.
Hello Everyone. I'm back with another monthly recipe. This month I'm sharing with you all a 7 layer dip. Which I just find this recipe a few month ago on pinterest. I have made it a total of 3 time already. Since my husband and me enjoy eating this. We decide it would be prefect to make again for his work potluck on Monday. So I whipped it up again.

I do a few things different then the recipe. Instead of mashing the avocados I put them in my food processor.  I find it so much easy to do it that way. Plus this way I know all the avocados are blended together well. I also use 1 tomato instead of the 4. Another thing I do is I only use a pound and half of the hamburger.

Monthly Recipe: Monster Cookies

Ingredients

1 1/2 cups creamy or chunky peanut butter
1 cup packed light brown sugar
1 cup granulated white sugar
8 tablespoons (1 stick) unsalted butter, softened
3 large eggs
1 tablespoon vanilla extract
4 1/2 cups quick cooking oats
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
1 cup M&M's plain chocolate candies

Directions
1. Preheat oven to 350°F. Spray cookie sheets with nonstick spray, or line with parchment paper or a silpat mats.
2. In a large bowl, combine the peanut butter with the sugars and butter. Use an electric mixer to mix until well combined. Mix in the eggs and vanilla. Mix in the oats and baking soda. Then stir in the chips and M&M's.
3. Drop the cookies by heaping spoonfuls onto the prepared cookie sheets. If you'd like your cookies to look pretty (like the photo), dot a few extra M&M's and chocolate chips on each mound of dough before baking.
4. Bake 10 to 12 minutes. Do not overbake. Cool for 5 minutes on cookie sheets until cookies are set. Transfer to wire racks; cool completely before storing in an airtight container.
Hello Everyone. It's time for my monthly recipe again. This month I'm sharing my all time favorite cookie recipe with you all. I have made these cookie a lot. I actually made them last month for my husband pot luck.  Which I was happy that everyone at my husband work loved them and there was no leftover cookie for my husband to bring home. Due to I would have ate them all. I did every good when I was making these and only had one cookie.

Monthly Recipe: Easy Biscuits and Gravy

Ingredients

1 Can of refrigerated biscuits
1 (9.6 once) of your favorite package sausage
1/4 cup flour
2 1/2 cups milk
salt and pepper to taste

Directions

1. Bake biscuits according to package directions.

2. Meanwhile, cook sausage in large skillet over medium heat 5-6 minutes or until thoroughly heated, stirring frequently. Stir in flour. Gradually add milk; cook until mixture comes to a boil and thickens, stirring constantly. Reduce heat to medium-low; simmer 2 minutes, stirring constantly. Season to taste with salt and pepper.

3. Split biscuits in half. Place 2 halves on each of 8 plates; top with about 1/3 cup gravy.

Hello Everyone. I'm back with a new monthly recipe to share with you all. My husband actually taught me how to make this. After he find out that I had been making gravy all these years. With the pre-made package that all you have to do is add water to it. So in January he showed me how to make real sausage gravy. Which is much more taster to eat then the cheat way the pre-package kind. I also love the fact this is super easy to make. 

Now I just need to learn how to make my own biscuits.

Monthly Recipe: Awesome Pasta Salad

Ingredients

1 (16 ounce) package fusilli (spiral) pasta

3 cups cherry tomatoes, halved
1/2 pound provolone cheese, cubed
1/2 pound salami, cubed
1/4 pound sliced pepperoni, cut in half
1 large green bell pepper, cut into 1 inch pieces
1 (10 ounce) can black olives, drained
1 (4 ounce) jar pimentos, drained
1 (8 ounce) bottle Italian salad dressing

Directions
1. Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and rinse with cold water.

2. In a large bowl, combine pasta with tomatoes, cheese, salami, pepperoni, green pepper, olives, and pimentos. Pour in salad dressing, and toss to coat.

Hello Everyone. Since tomorrow a lot of people in the states with be celebrating 4th of July.  I decide it would be the prefect time to share a new monthly recipe with you all.  I made this pasta for the first time a few weeks ago. For my husband pot lot at work. The pasta salad was a hit. There was even some leftover. So my husband brought it back home with him. So I try it. I have to say it was super yummy. The only thing I didn't like was I used way to many black olives. I not a huge olive person. The only way I eat them is if there in something like this.

Monthly Recipe: Proatmeal

 Ingredients
2/3 cup cooked oatmeal, prepared with water
1 scoop of protein powder
1/2 cup of fresh or frozen berries
1-1/2 Tbsp chopped walnuts
Splash of skim, almond, rice, or soy milk.
 
Directions
 Combine ingredients in bowl

Hello Everyone, This month recipe is an easy breakfast meal. Which I enjoy eating. I do make mine a little different then what the recipe calls for. I don't use the water to cook my oatmeal. I used 1/2 cup of almond milk. After I add the milk. Then I add my protein powder in it. Stir it up and then pop it in the microwave. Once it done cooking. I add my blueberries and walnuts. With the items I use up above this recipe is 451 calories. It keep my super full until lunch time.
